  1. Pr\u00e9lever du chocolat temp\u00e9r\u00e9 dans la temp\u00e9reuse dans un r\u00e9cipient.<\/li>
  2. Dans une casserole, porter la cr\u00e8me de coco \u00e0 \u00e9bullition.<\/li>
  3. Verser 1\/3 de cette pr\u00e9paration sur le chocolat. Avec une cuill\u00e8re en bois ou en plastique, tourner en restant bien au centre du r\u00e9cipient afin de cr\u00e9er un noyau. Ajouter un autre 1\/3, et ramener peu \u00e0 peu le chocolat liquide des bords vers le centre. Rajouter le dernier 1\/3 et continuer \u00e0 tourner jusqu\u2019\u00e0 l\u2019obtention d\u2019une p\u00e2te lisse et brillante.<\/li>
  4. Passer le tout au mixeur afin de parfaire l\u2019\u00e9mulsion.<\/li><\/ol>\n\n\n\n

    Pralines moul\u00e9es <\/strong><\/p>\n\n\n\n

    Mettre la ganache au r\u00e9frig\u00e9rateur. Quand elle est ti\u00e8de, presque froide, verser la ganache dans une poche \u00e0 douille et fourrer les coques.<\/p>\n\n\n\n

    Pralines enrob\u00e9es <\/strong><\/p>\n\n\n\n

    Laisser refroidir une nuit au r\u00e9frig\u00e9rateur selon le modelage choisi et enrober les pralines. Pour un topping coco, rouler les pralines enrob\u00e9es de chocolat fondu dans une assiette de noix de coco r\u00e2p\u00e9es. <\/p>\n\n\n\n
